BUCKWHEAT BANANA + APPLE PUPCAKES

INGREDIENTS:

2 large or 3 medium bananas

1 pack Ella & Abbi’s Pupcake mix

2 eggs

1 cup buckwheat flour

2 tsp baking powder

1 apple, de-cored and roughly chopped

2 Tbsp peanut butter (+ a little extra for topping)

Preheat oven to 180C. Blend bananas in a blender or food processor until smooth.  Add chopped apple and flour and blend again on high for a minute or two.  Add eggs, baking powder and peanut butter and continue to blend until ingredients are well combined.

Line a muffin tray with cupcake/muffin cups. Pour mixture into each cup filling near the top.  Bake for approx 20 minutes or until cooked through (check regularly).

Once pupcakes have cooled, spread a little almond butter over top of each muffin with a knife and top with a treat or two.

Store in airtight container in fridge.
